Recipe Development & Testing


Rochelle can create original recipes per your requirements or test and develop ideas from consumers.

Every recipe under consideration is evaluated for overall appeal, taste, appearance, cooking methods and ingredient usage. All recipes are then prepared and critically evaluated. A second testing of the recipe is performed if modifications are needed to attain superior quality.

Rochelle provides a detailed recipe testing report that documents results and includes quality ratings, suggested retesting variations, food styling comments. Nutritional information, institutional yields, microwave directions, romance about the recipe and a digital/Polaroid photograph can be provided upon request.

Cookbook Coordination

Rochelle's knowledge and years of experience in developing cookbooks is applied to every one she develops. Each cookbook displays the client's professional image. Cookbooks take 6-18 months to complete.

  • Target market of the cookbook audience, writing style and recipe form will be determined.
  • The client's specific ingredient terminology (e.g., rolled oats vs. old fashioned oats) and ingredient limitations (e.g., no refined sugars, no alcohol, no exotic ingredients) will be documented.
  • Length of the cookbook and page dimensions will be determined.

Rochelle will plan the layout of your cookbook, write text for the book, develop and test all recipes to be included in the cookbook, nutritionally analyze recipes (when required), and get bids from typesetters, printers, food photographers and food stylists.

Upon request, Rochelle will also act as Art Director at photo shoots.


Recipe Contest Coordination

Rochelle brings a dual perspective to recipe contests. She has coordinated contests for numerous food companies and manufacturers. She has also entered and won numerous recipe contests. Rochelle understands how and why some contests work while others fail.

Successful recipe contests begin with careful planning, coordination, and attention to detail. After the scope and layout of the contest has been defined, most take 4-6 months to complete, depending upon requirements. Below is a partial list detailing the process:

  • Set up rules, deadlines, budget, post office box, and sponsors.
  • Write promotional material, help develop advertising, obtain sponsors and prizes, enlist contest judges, review and test recipes, as well as direct contestants.
